This weeks shopping


All set and ready to go, hoping for a great loss next week.
Meals I'm planning this week - Fake away Kebab, Stew, Diet Coke Chicken, Diet Fanta Chicken, Rissoto and Bolognese.


Diet Coke Chicken

I was not convinced that I would enjoy this, but I did. It was lush! I actually felt like it was something that I shouldn't be eating. So good!




500g Diced chicken or Quorn
Can of Diet Coke,
Passata,
2 Onions - chopped or sliced,
Oxo cube,
Chinese 5 Spice
Fry Light
 
Spray a pan with fry light and add the chicken and onions, when almost cooked sprinkle on an Oxo.
Add 6 tbsp of passata, the can of Diet Coke and 1 tsp of Chinese 5 Spice and stir well.
Bring to the boil and then simmer until the sauce has thickened (about 15 - 20 minutes).
I also added some mixed veg to bulk it out.

Slimmer of the Week

Yaaaaaay! Today I lost 3lbs which got me my 4 stone award back and I got Slimmer of the Week for the first time. Soooooo happy. Feeling motivated I left group and went straight to the shop to get the ingrediants to do another batch of cooking to help me keep on track this week. Hope I can do another 3 lbs :-)

Sh'Bam

So I have just got back from my first Sh'Bam class and I really enjoyed it. I feel as though I was absolutely rubbish at it hahaha but I enjoyed it and I worked up a sweat so that's all that matters. I think Sh'Bam will now definitely become a regular feature in my exercise regime.

All stocked up and ready to go!

I got some great bargains to help cook a load of different meals for the freezer so I stay on plan. Fingers crossed for a good weight loss on Thursday.

Hi Guys!

I lost my way yet again but I think I may finally be back on track, I know you've heard it all before but please bear with me. I started Slimming World in May 2011 and I got my 4 stone award in October 2012, but I lost it in December after my 30th birthday weekend away, Christmas and the New Year. Anyway I got my brand new Slimming World book in January and after looking through my old one I was shocked to realise the amount of money I had wasted over the last 10 months "playing" at losing weight at Slimming World. 9 times out of 10 I wouldn't stay to Image Therapy (BIG mistake) I'd just get weighed and go (the worst thing to do) so never really took much notice of the weight going back on 1/2 lb here, 1 lb there it didn't seem a big deal until in January my first weigh in of the year was a 2lb gain and I realised I was at the same weight I was in March 2012. I could've cried all that money I had wasted, what on earth had I been playing at? Needless to say I stayed to Image Therapy that day and told my consultant that would be my only gain in my new book and so far I have kept to my word with 7lbs lost since January.
Things to help me lose the lbs -
  •  batch cooking - making sure that there is always something ready to eat when I need it so I don't start to nibble things I shouldn't. Getting too hungry can set me off on a binge cycle so I try to always have something on hand that can be warmed up in a couple of minutes.
  • variety - having different meals so I don't get bored. This week I've had Kebab, Curry, Stew and Bolognese on hand.
  • exercise - I started back at Aerobics yesterday and went to Aqua Fit last night. I've even talked a couple of friends into joining too so hopefully that should keep me motivated and make me less likely to cancel.

Kebab

FREE on RED (check syns on the mince you use)
 

 
1 tsp Plain Flour
1 tsp Oregano
1/2 tsp Italian Herbs
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Cayenne Pepper
1 tsp Salt
1/2 tsp Black Pepper
500g Extra Lean Mince
Fry Light
 
Oven Gas 4
 
Mix all the dry ingredients together in a bowl. Add the mince and knead for 2-3 minutes until smooth.
Spray baking tray or loaf tin with Fry Light.
Shape or place in a loaf tin and cook on middle she for 1hr 20 minutes - turning over half through.
Once cooked remove from oven and cover with foil. Rest for 20 minutes.

Chicken and Vegetable Curry

 FREE on Red and Extra Easy
 
 
 
4 Chicken Breasts - diced
2 Onions - sliced
2 tsps Turmeric
2 tsps Garlic powder / 2 Garlic cloves - crushed
400ml Chicken stock
1/2 tsp Cinnamon
1 tsp Coriander
1 tsp Cumin
1 tbsp Ginger
1/2 tsp Chilli powder
Salt and Black Pepper
Vegetables of choices (I used frozen veg for quickness)
 
1. Place chicken in a pan with 200ml of Chicken stock, 1 tsp of Turmeric and 1 tsp of Garlic powder, stir, bring to boil and then simmer.
2. Place the onions in a separate pan with 200ml of Chicken stock, 1 tsp of Turmeric and 1 tsp of Garlic powder, stir, bring to the boil and then cook on a medium heat until almost all liquid is gone and onions are soft.
3. Place the onions in with the chicken and then add all the spices and vegetables, simmer until cooked.
 
Eat on its own or serve with rice, noodles or pasta (EE) or Beansprouts (RED).

Chicken, Bacon and Cheese Omlette


Chicken, Bacon and Cheese Omlette

This was delicious!

Chicken Korma

FREE on Red
 
Serves 4
 
700g diced chicken or 4 chicken breasts
284ml or ½ pint very low fat natural yogurt.
2 tsp turmeric
3 garlic cloves, crushed
2 large onions, sliced
426 ml or ¾ pint chicken stock made with Bovril
3 cardamon pods
1" piece Cinnamon stick
4 black peppercorns
4 cloves
1 tsp crushed coriander seeds
1 tbsp finely chopped root ginger
1 tsp ground cumin
½tsp chilli powder
salt and ground black pepper


Slice the chicken and place in a bowl.
Mix together the yoghurt, turmeric and garlic, pour over the chicken and stir. Cover the bowl and leave to marinate in the fridge for at least 4 hours (or overnight if wished).
Put the onion and stock in a large saucepan, cover and bring to the boil.
Boil for 10 minutes then reduce the heat, uncover the pan and cook gently for 20 minutes, until the onion is tender, golden and syrupy.
Add all the spices to the pan, and cook for 3 - 4 minutes. Reduce the heat to the lowest setting and allow to cool a little (so the yoghurt doesn't split) Then add the chicken and the yogurt marinade. Cover the pan and simmer very gently over a low heat for 45 minutes, until the chicken is cooked. Season to taste with salt and pepper, and serve immediately.
 
As I was having a red day instead or rice or pasta I had mine with beansprouts.
 

I lost my way but now I'm back

So as you can see (if anyone actually reads this) I haven't been on for a couple of months, with my 30th birthday (which I went away with a group of friends for) and Christmas (which in my house is not just 1 day of nice food and overindulging, it is a full week between Christmas and New Year) I strayed completely off the Slimming World path. But I am now back on it and feeling better about myself again. I was starting to feel really down all the time but with no reason, being back on Slimming World now I think the reason behind it was somehow something to do with all the rubbish I was putting in my mouth as since I have been back following Slimming World I have felt much better. I've starting going to Zumba which I have to say I love, love, love. I am completely and utterly rubbish at it and have no rhythm or coordination but it is great fun and such a good laugh.
